The Story
Tortilla Española is Spain's most essential dish. Legend says it was created in the 19th century by a Navarran housewife for General Tomás de Zumalacárregui. Every Spanish household has its own version, making it the undisputed national dish.
Instructions
- Gently fry potatoes and onions in olive oil on low heat for 20 min until soft (not crispy).
- Drain oil; combine potato-onion mixture with beaten eggs.
- Pour into an oiled pan, cook on medium heat for 4 min.
- Flip using a large plate; cook the other side for 3 min.
- The centre should remain slightly runny. Serve warm.
