The Story

Tortilla Española is Spain's most essential dish. Legend says it was created in the 19th century by a Navarran housewife for General Tomás de Zumalacárregui. Every Spanish household has its own version, making it the undisputed national dish.

Instructions

  1. Gently fry potatoes and onions in olive oil on low heat for 20 min until soft (not crispy).
  2. Drain oil; combine potato-onion mixture with beaten eggs.
  3. Pour into an oiled pan, cook on medium heat for 4 min.
  4. Flip using a large plate; cook the other side for 3 min.
  5. The centre should remain slightly runny. Serve warm.
