Ingredients

200 g flat rice noodles 200 g prawns 2 eggs 3 tbsp tamarind sauce 2 tbsp fish sauce 1 tbsp sugar 2 garlic cloves 1 tsp chilli flakes 100 g broken green beans 50 g roasted peanuts Lime, fresh cilantro

The Story

Pad Thai was promoted as a national dish by the Thai government in the 1930s as part of a Thai nationalism campaign. It Thai-ified Chinese-influenced rice noodles with tamarind, fish sauce and peanuts, creating a uniquely Thai flavour.

Instructions

  1. Soak noodles in warm water for 20 min; drain.
  2. Heat wok over high heat; stir-fry prawns and garlic.
  3. Crack in eggs and scramble.
  4. Add noodles and sauce (tamarind, fish sauce, sugar); stir-fry 3 min.
  5. Add beans and chilli flakes.
  6. Serve with peanuts, lime and cilantro.
