Ingredients

400 g prawns 1 litre chicken stock 2 lemongrass stalks (bruised) 3 slices galangal 4 kaffir lime leaves 2 tbsp fish sauce 2 tbsp lime juice 1 tbsp sugar 3 tbsp spring onion Fresh cilantro 2 tbsp nam prik pao (chilli paste)

The Story

Tom Yum is Thailand's world-famous sour-spicy soup. Its name comes from Thai 'tom' (boiled) and 'yum' (salad mix). The trio of lemongrass, galangal and kaffir lime forms the holy trinity of Thai cuisine.

Instructions

  1. Bring stock to a boil; add lemongrass, galangal and kaffir leaves.
  2. Simmer 5 min; add prawns, cook 3 min.
  3. Stir in fish sauce, lime juice, sugar and nam prik pao.
  4. Add spring onions.
  5. Serve hot, garnished with fresh cilantro.
