Ingredients

400 g chicken breast (diced) 400 ml coconut milk 3 tbsp green curry paste 1 aubergine (diced) 100 g bamboo shoots 2 tbsp fish sauce 1 tbsp sugar 4 kaffir lime leaves 1 red pepper (sliced) Fresh basil

The Story

Green curry is Thailand's most popular curry type. Its paste of green chillies, lemongrass and galangal is milder yet more aromatic than red curry. Said to have originated in the royal court, it is considered Thailand's most elegant curry.

Instructions

  1. Fry green curry paste in a wok for 1 min.
  2. Add half the coconut milk; simmer 3 min.
  3. Add chicken; cook 5 min.
  4. Add remaining coconut milk, aubergine and bamboo shoots; cook 8 min.
  5. Stir in fish sauce, sugar and kaffir lime leaves.
  6. Serve with red pepper and fresh basil.
