Dim Sum (Har Gow)

Ingredients

250 g wheat starch 50 g tapioca starch 200 ml boiling water 300 g prawns (peeled, chopped) 50 g bamboo shoots (finely diced) 1 tbsp sesame oil 1 tsp salt 1/2 tsp white pepper 1 tbsp soy sauce

The Story

Dim Sum means "touch the heart" in Cantonese. Originating centuries ago in the tea houses of Southern China, it has become an inseparable part of brunch culture in Hong Kong and worldwide. Har Gow (prawn dumpling) is dim sum's most iconic piece.

Instructions

  1. Mix starches, knead with boiling water; rest 15 min.
  2. Combine prawns with bamboo shoots, sesame oil, salt and pepper.
  3. Pinch small dough balls and roll thin.
  4. Place filling in the centre, pleat edges to seal.
  5. Arrange on oiled parchment in a steamer.
  6. Steam for 8-10 min. Serve with soy sauce.
