300 g tipo 00 flour
200 ml warm water
7 g dried yeast
1 tsp salt
1 tbsp olive oil
200 g San Marzano tomatoes
200 g mozzarella
Fresh basil
Extra-virgin olive oil
The Story
Margherita pizza was created in 1889 by Neapolitan pizzaiolo Raffaele Esposito for Queen Margherita of Italy. The tomatoes (red), mozzarella (white) and basil (green) represent the Italian flag. Neapolitan pizza-making is listed on the UNESCO Intangible Cultural Heritage list.
Instructions
- Mix flour, yeast, salt, water and oil; knead 10 min. Rest 1 hour to rise.
- Crush tomatoes with salt and oil for the sauce.
- Divide dough into 2 balls; stretch by hand to 30 cm diameter.
- Spread sauce, lay mozzarella slices on top.
- Bake at 250°C preheated oven for 10–12 min.
- Top with fresh basil leaves and a drizzle of olive oil. Serve.
