6 egg yolks
150 g sugar
500 g mascarpone
300 ml espresso (cooled)
3 tbsp Amaretto or Marsala
200 g ladyfinger biscuits (Savoiardi)
Cocoa powder
The Story
Tiramisu means 'pick me up' in Italian. It is believed to have been born in the 1960s at Le Beccherie restaurant in Treviso. Layers of espresso-soaked biscuits and mascarpone cream represent the most elegant expression of Italian dessert culture.
Instructions
- Whisk egg yolks with sugar until pale and fluffy.
- Add mascarpone and stir until smooth.
- Mix espresso with liqueur; quickly dip each biscuit.
- Layer soaked biscuits then cream; repeat for 2 layers.
- Sieve cocoa powder over the top layer.
- Refrigerate at least 4 hours. Serve cold.
