8 corn tortillas
400 g chicken (boiled, shredded)
3 ancho chillies (dried)
2 tomatoes
1 onion
2 garlic cloves
200 g queso fresco or white cheese
200 ml cream

The Story
Enchiladas are a time-honoured recipe dating to pre-Hispanic Mesoamerican cuisine. The word "enchilada" means "to cover with chilli". The Maya and Aztec civilisations started the tradition of coating tortillas with various sauces centuries ago.
Instructions
- Soak ancho chillies in hot water for 20 min.
- Blend chillies with tomatoes, onion, garlic and cumin into a smooth sauce.
- Cook the sauce in a pan on low heat for 10 min.
- Dip tortillas in the sauce, fill with chicken, roll up.
- Arrange in a baking dish, pour remaining sauce, cream and cheese on top.
- Bake at 200°C for 15 min. Serve hot.
