8 corn tortillas 400 g chicken (boiled, shredded) 3 ancho chillies (dried) 2 tomatoes 1 onion 2 garlic cloves 200 g queso fresco or white cheese 200 ml cream Salt, cumin

The Story

Enchiladas are a time-honoured recipe dating to pre-Hispanic Mesoamerican cuisine. The word "enchilada" means "to cover with chilli". The Maya and Aztec civilisations started the tradition of coating tortillas with various sauces centuries ago.

Instructions

  1. Soak ancho chillies in hot water for 20 min.
  2. Blend chillies with tomatoes, onion, garlic and cumin into a smooth sauce.
  3. Cook the sauce in a pan on low heat for 10 min.
  4. Dip tortillas in the sauce, fill with chicken, roll up.
  5. Arrange in a baking dish, pour remaining sauce, cream and cheese on top.
  6. Bake at 200°C for 15 min. Serve hot.
