Ingredients

1 cup red lentils 1 onion (chopped) 1 carrot (chopped) 2 garlic cloves 2 tbsp olive oil 1 tsp salt 1 tsp cumin Juice of 1 lemon 4 cups water or broth

The Story

Red lentil soup has been a staple across Anatolia and the Middle East since ancient times. Archaeological evidence suggests lentils were cultivated in the region over 8,000 years ago, making this one of humanity's oldest dishes.

Instructions

  1. Sauté onion, carrot and garlic in oil for 5 min.
  2. Add rinsed lentils and water. Simmer 25–30 min until soft.
  3. Blend until smooth.
  4. Return to heat, season with cumin and salt.
  5. Squeeze lemon before serving with toasted bread.
