500 g fresh spinach
200 g feta cheese
4 eggs
1 onion (chopped)
2 tbsp olive oil
1 tsp dill
Salt, black pepper
12 phyllo pastry sheets
100 g butter (melted)
The Story
Spanakopita is Greece's most beloved savoury pie. The phyllo pastry tradition dates back to the Byzantine era. Its spinach and feta filling makes it an essential vegetarian dish during Orthodox fasting periods.
Instructions
- Wash and blanch spinach; squeeze out excess water.
- Sauté onion in olive oil; add spinach.
- Mix in cheese, eggs, dill, salt and pepper.
- Brush phyllo sheets with butter; place filling and fold.
- Bake at 180°C for 30–35 min until golden.
- Serve warm or at room temperature.
