Tonkotsu Ramen
Tonkotsu ramen is the iconic dish of Fukuoka on Kyushu island. Developed in 1947 by street vendor Shige Miyamoto, it has grown into one of Japan's most beloved ramen styles. The milky-white colour comes from collagen proteins released when pork bones are boiled vigorously for hours.

Sushi is Japan's greatest culinary gift to the world. Its origins lie in narezushi — preserving fish by fermenting it in rice vinegar. Modern nigiri sushi was developed in the 1820s in Edo (Tokyo) by Hanaya Yohei as a fast street food.
